Chef Patron of The Cley Hall Hotel, Lee Clarke, believes passionately in providing food which is sourced primarily from the finest local ingredients, whenever & wherever possible. The hotel’s changing menus reflect the seasonal nature of local produce and we take great pride in developing association with suppliers whose commitment to excellence and welfare for the animals they raise matches our own high standards of cuisine and presentation. The hotel is a proud sponsor of the Fenland Wildfowlers Association and Lee’s father, George, can often be found wandering The Wash marshes in search of duck for the evening menu – Lee won’t be changing his more reliable supplier, however as George is still waiting to bag his first bird!...

Woodlands Farm
Located within the fertile Lincolnshire Fens in an area known as South Holland, Woodlands Farm is a 690 hectare mixed organic farm set in a landscape of wide-open and colossal skies. The term ‘mixed organic’ means that Woodlands grow vegetables and arable crops as well as raising livestock. The fertility and structure of the soil is enhanced by cattle, turkeys, sheep and chickens all of whom play a part in the traditional crop rotations.

Grasmere Farm
Much like The Cley Hall Hotel, Grasmere Farm is a family business which takes enormous pride in the quality of it’s traditional pork and bacon products. Our chef considers the sausages to be the very best by a country mile - and there are a lot of country miles in Lincolnshire!...

Coles Fishmongers
Coles Fishmongers have been working with our chef Lee Clarke for the past two years and have proved to be a fantastic supplier who provide us with the very best catches on a daily basis. Coles also has the responsibility of supplying fish to the Queen’s household and, quite frankly, if it’s good enough for her majesty then it’s good enough for us!...
