Having previously been employed as head chef before taking over the hotel in May 2009, Chef Patron Lee Clarke, ably assisted by his wife Teresa and their enthusiastic team have set out out to ensure The Cley Hall Hotel develops a reputation as an oasis of fine dining and hotel comfort in Lincolnshire’s heartland: The Fens.
Before his relocation to Spalding, Lee was head chef at The Ickworth Hotel near Bury St Edmonds in Suffolk having joined the von Essen group following a stint with Shell, where he spent two years as head chef and was responsible for the private fine dining and hospitality facilities at Shell Tower beside London’s South Bank.
Lee's rich and varied culinary career has spanned 16 years to date and has included positions at a number of renowned London eateries, such as the Michelin-starred Mirabelle restaurant, The Ivy, and Harvey Nichols.
Lee’s wife, Teresa, also has a wealth of experience having worked in leading 5-star hotels such as One Aldwych and the Metropolitan in London and Parrot Quay Resort Hotel, one of Condé Nast’s most exclusive establishments. Testament to the family-run nature of the new management, Lee’s parents Jenny and George are often on hand to help out where they can.
